Groveport, Ohio. My cousin, Hayley, and I have been going to Ohio to visit our great aunt and uncle since we were 12 years old. When we’re here we ride horses with Don (aka Donald, Don Quixote, or Donny Bill), go shopping with Joyce, and just hang out and spend time together. It is TONS of fun. Joyce always says that she thinks it’s so funny that us “young people” want to hang out with “old folk” like them, but Hayley and I love it here so we keep coming.
As soon as we got here at 8:05 am on Tuesday (our flight left at 6 in the morning…) we grabbed breakfast at our favorite restaurant Bob Evans and then went to the grocery store to get snacks for us kids. I knew I wanted to bake something for Joyce and Don, so I decided to do strawberry cupcakes since they’re so delicious right now. And lucky for me Donny Bill took us to a local farmer’s market where we bought gorgeous strawberries that were perfectly sweet. You could say I was excited.
I baked the cupcakes late that night and then finished them up the next morning by frosting them with the strawberry buttercream. After having a few ourselves, Hayley and I walked around the outdoor arena where everybody rides the horses and where the barns are and handed out cupcakes. They were a big hit.
Strawberry Cupcakes: (recipe adapted from Martha Stewart)
3 1/4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
2 sticks butter
2 1/4 cups sugar
1 egg white
1 cup milk
1 1/2 teaspoon vanilla
2 cups diced strawberries
1.) Combine dry ingredients.
2.) Cream together butter and sugar.
3.) Add eggs to butter mixture one at a time.
4.) Add dry ingredients and milk in alternating batches to mixture.
5.) Put in greased cupcake pan (or you can use cupcake tins) and bake for 20 minutes in a 350º oven. (makes 34 cupcakes)
4 egg whites
1 1/4 cup sugar
3 sticks butter cut into pieces
1 1/2 cup strawberries, pureed
1.) Place egg whites and sugar in a heatproof bowl set over simmering water. Whisk until sugar dissolves and until the mixture reads 160º on a candy thermometer.
2.) Whisk on medium for 5 minutes or until stiff, glossy peaks form.
4.) Add strawberry puree, beat for 5 minutes. (makes 5 cups)
